This restaurant’s cuisine caters to its chosen niche—foreigners and balikbayans. It is one of the top three restaurants at Greenbelt in terms of sales. It also won the Ayala Store Excellence award several times based on sales, cleanliness, marketing, service and customer satisfaction. Says Segismundo, “There is a conscious effort to present Filipino fare in an attractive manner.” “Sentro has a sound Pinoy approach to cuisine. I appreciate the extra services such as asking the guest how asim (sour) he wants his sinigang. Then there’s a play on fusion, like corned beef sinigang, which is surprisingly masarap!” says Reyes-Lumen.
Segismundo also lauds the restaurant’s signature dish: Sinigang na Corned Beef. The beef and short ribs are brined for a week using Prague salt. The meat is stewed in tamarind broth with vegetables. While waiting for the orders, the diner is served a plate of salted watermelon seeds.
